Ingredients:
1lb Ground beef (or ground turkey)
2-4 tablespoons of Homemade Chili Seasoning
1 can pinto beans (do not drain, puree in a blender or use an immersion hand blender)
*you can also do kidney beans but I only use pinto beans for this version
1 can of corn (drained)
1- 6oz can of tomato paste
1- 8oz can of tomato sauce
*If you like thinner chili add some beef broth or fill the tomato paste/sauce can with water.
Instructions:
Brown meat in a pot. I like to use my handy dandy meat chopper to chop the meat up. My kids don't like the chunkiness so I chop meat until there are no big noticeable chunks.
Add your chili seasoning and mix with meat. Let the meat and seasoning simmer while you prep the other ingredients.
Pour the beans (do not drain) into a bowl. Use the immersion blender to puree until smooth, then add to the pot.
Drain the can of corn and add to pot.
Add tomato paste and sauce and mix it all in the pot.
Let the chili simmer for about 15-20 minutes on low to allow everything to infuse.
Optional Toppings:
Shredded cheese (cheddar or Monterey Jack)
Sour cream
Sliced green onions
Fresh cilantro
Crushed tortilla chips
Jalapeño slices
Serving Suggestions:
